Like all great inventions, ice cream was first discovered in the East and transferred to the West by travelers. Now it is a part of our daily lives, summer and winter. With production on an industrial scale, we can cool ourselves very cheaply in all four seasons. But even though we have forgotten now, home-made ice cream has always tasted more delicious.
During the Ottoman period, very deep snow wells were dug at the peaks of certain mountains such as Uludağ, and the snow that fell in winter was filled and compressed into these deep snow wells, and they were covered to prevent contact with air and sun. Some of the snow in the snow wells would have turned into ice towards summer. Delicious desserts were made with this snow and ice.
The first ice cream recipes written in Ottoman Turkish are milk ice cream and strained Ashura ice cream recipes in Ali Eşref Dede's Food Treatise dated 1856. Our authors aim to revive this tradition with recipes that can be easily made in small ice cream machines.
